Yields 12 muffins
Ingredients:
2 medium ripe bananas, peeled
4 tablespoons (1/4 cup) molasses
1/4 cup brown sugar, firmly packed
1 tablespoon pure vanilla extract
2 large eggs, at room temperature
4 tablespoons (1/4 cup) unsalted butter, melted and cooled
1 cup almond milk (or your milk of choice)
1 cup wheat bran
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Directions:
Preheat the oven to 350°. Prepare a standard muffin pan by generously misting with nonstick oil spray. Set aside.
Add the bananas to a large mixing bowl and mash until smooth in texture. Add the molasses, brown sugar, and vanilla extract. Mix until fully combined. Add the eggs, followed by the melted butter. Mix until the eggs are fully beaten and all ingredients are well combined. Once well mixed, add the almond milk and wheat bran. Mix until the bran is fully incorporated into the wet ingredients.
Combine the flour, baking powder, baking soda, cinnamon, and salt. Add the flour mixture to the wet ingredients and mix to form a batter.
Use an ice cream scoop to evenly divide batter into the muffin pan. Bake for about 30 minutes, until a toothpick comes out clean when inserted into the center of the muffins. Remove from the oven and cool completely to room temperature before removing muffins from the pan.
