Cheesecake Banana Bread

Ingredients:

For the Banana Bread:

  • 6 ripe bananas, peeled and mashed

  • 1/2 cup pure maple syrup

  • 1 tablespoon pure vanilla extract

  • 1/4 cup unsweetened applesauce

  • 2 large eggs, at room temperature

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 3/4 cup dark chocolate chips

For the Cheesecake Layer:

  • 1 block (8 ounces) cream cheese, softened

  • 2 tablespoons pure maple syrup

  • 2 tablespoons all-purpose flour

  • 1 large egg

  • 1 teaspoon pure vanilla extract

Directions:

Preheat the oven to 350°. Add mashed bananas to a 10" oven-safe skillet misted with oil spray. Mix in the maple syrup, eggs, applesauce, and vanilla extract. Whisk to combine.

Add the flour and baking soda. Mix to form a batter in the skillet. Fold in the chocolate chips.

Separately, combine the cheesecake ingredients until fully incorporated. Place dollops of the cheesecake batter on top of the banana bread batter and, with a butter knife, make swirls so the cheesecake spreads throughout the mix. Bake for one hour. Remove from the oven and cool slightly prior to serving.
