Yields 1 cake
Ingredients:
2 medium ripe bananas, peeled and mashed
1/2 cup pure maple syrup
1 tablespoon pure vanilla extract
2 large eggs, at room temperature
1 cup plain Greek yogurt
1/2 cup milk, 2% or whole
1/2 cup unsweetened cocoa powder
1/2 cup chocolate protein powder
1/2 teaspoon ground espresso
1 cup water
2 cups flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon ground cardamom
3/4-1 cup dark chocolate chips, plus additional
Directions:
Preheat the oven to 350°. Prepare a large round cake pan, about eight or nine inches in diameter, by generously misting with oil spray and/or lining the bottom with parchment paper. Set aside.
Add mashed bananas to a large mixing bowl, followed by maple syrup, vanilla extract, and eggs. Mix to combine, until the eggs are fully beaten. Add the yogurt and milk. Mix until fully combined.
In a separate bowl, combine cocoa powder, chocolate protein powder, and espresso. Whisk to combine. Add the water and mix. Transfer the chocolate mixture into the wet ingredients and mix until fully incorporated.
Separately, combine flour, baking powder, baking soda, and ground cardamom. Carefully add the wet ingredients into the dry ingredients and mix to form a batter. Fold in the chocolate chips.
Transfer batter to the prepared cake pan. Top with additional chocolate chips. Bake for 50-55 minutes, until cake rises slightly, and a cake tester or toothpick comes out clean when inserted into the center of the cake. Remove from the oven and cool completely to room temperature. Garnish with additional cocoa powder, if desired.
