Peach Burrata Caprese

Yields approx. 4-6 servings

Ingredients:

  • 1 pint cherry or grape tomatoes, halved

  • 2 medium peaches, finely sliced

  • 1/4 cup fresh basil or fresh parsley, finely chopped

  • Salt and pepper, to taste

  • 2 tablespoons EVOO

  • 1 ball (4 ounces) burrata cheese

  • Balsamic glaze

Directions:

Add tomatoes, peaches, and herbs to a bowl. Toss to combine. Season with salt and pepper and drizzle on the EVOO. Toss until fully incorporated.

Tear the burrata over the salad and place evenly across. Drizzle with balsamic glaze and garnish with additional fresh herbs.
