Yields about 6 servings
Ingredients:
1 box linguine, cooked according to box directions
2-3 tablespoons extra virgin olive oil
4 garlic cloves, minced
1-2 teaspoons crushed red pepper flakes, to taste
1 pint cherry or grape tomatoes, halved
1/2 cup tomato sauce (or crushed tomatoes)
1 teaspoon Italian seasoning
Salt and pepper, to taste
1/2 cup grated Parmesan (or Pecorino Romano)
Fresh mozzarella (or burrata), sliced
Fresh basil, for garnish
Directions:
Warm the olive oil in a large skillet over medium heat. Add the garlic cloves and sauté for just about 2 minutes. Sprinkle on crushed red pepper flakes and mix to combine.
Add the halved tomatoes, followed by the sauce, Italian seasoning, salt, and pepper. Mix to combine and stir well until incorporated.
Mix in the grated parmesan. Reserve 1/2 cup pasta water before draining the pasta. Add to the sauce and mix. Toss cooked pasta with the sauce and top with fresh mozzarella (or burrata) and basil.
