Chocolate Chip Coffee Muffins

Yields 12 muffins

Ingredients:

  • 3 ripe bananas, mashed

  • 1/4 cup packed brown sugar

  • 2 large eggs, at room temperature

  • 2 teaspoons pure vanilla extract

  • 1 cup all-purpose flour

  • 1/4 cup whole wheat pastry flour

  • 1/4 cup unsweetened cocoa powder

  • 1-2 tablespoons ground espresso or ground coffee

  • 1 teaspoon baking soda

  • 1/4 teaspoon kosher salt

  • 1 cup chocolate chips

Directions:

Preheat the oven to 350°. Generously spray a standard muffin pan with nonstick spray.

Combine the mashed bananas and brown sugar. Mix until no lumps of sugar remain. Add the eggs, one at a time, and vanilla extract. Mix well to combine.

Whisk together the flours, cocoa powder, ground espresso or coffee, baking soda, and salt.

Gently add the flour mixture to the wet ingredients. Mix to form a batter. Fold in the chocolate chips.

Divide the batter evenly between 12 prepared muffin tins. Add additional chocolate chips on top, if desired. Bake for 18-20 minutes, until a cake tester or toothpick comes out clean. Remove from the oven and cool completely prior to removing from the muffin tins and serving.
