Yields 6 stuffed peppers
Ingredients:
6 medium sweet bell peppers, tops removed and deseeded
1 pound 90-93% lean ground turkey
1 1/2 cups marinara sauce
1 tablespoon plus 1 teaspoon Italian seasoning
1/2-1 teaspoon crushed red pepper flakes, to taste
Salt and pepper, to taste
1/2 cup grated parmesan, plus additional
1 cup shredded mozzarella cheese
Directions:
Preheat the oven to 400°. Add sliced bell peppers to a baking pan. Set aside.
Cook ground turkey in a skillet over medium heat. Use a spatula to break the meat down to crumbles as it browns. Once browned, mix in Italian seasoning, crushed red pepper flakes, salt, and pepper. Stir to fully combine.
Gently add in the sauce, followed by the parmesan cheese. Mix to combine all ingredients in the skillet.
Scoop the meat filling into the peppers, ensuring all peppers have relatively the same amount of filling. Bake for 20 minutes. Remove from the oven, sprinkle mozzarella and additional parmesan on top of each pepper, and place back in the oven for an additional 10 minutes. Remove peppers from the oven and serve.
