Yields one loaf
Ingredients:
2 medium ripe bananas, mashed
1/3 cup packed brown sugar
1/4 cup unsweetened applesauce
2 large eggs, lightly beaten and at room temperature
2 teaspoons pure vanilla extract
2 1/4 cups almond flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Chopped walnuts, pecans, or almonds, or dark/semisweet chocolate chips, for topping (optional)
Directions:
Preheat the oven to 350°. Prepare a standard loaf pan by generously spraying with nonstick spray. Set aside.
Combine the mashed bananas and brown sugar until no lumps of sugar remain. Add the applesauce, eggs, and vanilla extract. Mix well to combine all wet ingredients.
Separately, combine the almond flour, baking powder, baking soda, ground cinnamon, and kosher salt. Add the almond flour mixture to the wet ingredients. Mix well to form a batter.
Transfer the batter to the prepared loaf pan and smooth out the top to ensure an even and level layer of batter. Top with your desired toppings, if using. Bake for 45-55 minutes, until top is golden brown, and a cake tester or toothpick comes out clean when inserted into the center of the banana bread. Remove from the oven and cool completely to room temperature prior to slicing and serving.
