Ingredients:
1 cup almond flour
1/4 cup gluten-free all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1/2 cup unsweetened applesauce
1 cup granulated sugar
2 large eggs, lightly beaten and at room temperature
1 tablespoon pure vanilla extract
1/2-3/4 teaspoon almond extract
Directions:
Preheat the oven to 350°. Prepare a standard round cake pan by generously spraying with nonstick spray and/or lining with parchment paper. Set aside.
Combine the almond flour, gluten-free all-purpose flour, baking powder, and kosher salt.
Mix the applesauce and granulated sugar until well combined and no lumps of sugar remain. Add the eggs, vanilla extract, and almond extract. Mix well to combine all wet ingredients.
Add the flour mixture into the wet ingredients. Mix well to form a batter. Transfer the batter to the prepared cake pan, smoothing out the top to ensure an even coating.
Bake for 30-35 minutes, until a cake tester or toothpick comes out clean when inserted into the cake. Remove from the oven and cool to room temperature.
